Oatmeal with Apricots and Toasted Almonds

Oatmeal Ingredients

1½ cups fat-free or unflavored soy milk
1/3 cup dried apricots, chopped
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon almond extract
1 cup rolled oats
¼ cup flaxmeal
¼ cup fat free milk, warmed
4 teaspoons slivered toasted almonds

Directions

Bring milk, apricots, brown sugar and cinnamon to a gentle boil. Stir in almond extract, oatmeal and flaxmeal. Lower heat and cook uncovered for five minutes or until most of the liquid is absorbed. Top with warmed milk and slivered toasted almonds. Makes two servings.
