I love making cupcakes! This frosting is a family favorite and super easy to make. You can use any flavor cake. Red Velvet is especially yummy! For Cinco de Mayo I like to bake a white cake mix, half of which I have dyed red and half of which is dyed green. You can also drop globs of both colors of the mix into baking cups for super cool, tie-dyed-looking cupcakes.
Ingredients:
1 pint Shamrock Farms Sour Cream
2 cups granulated sugar
2 cups flaked coconut
8 oz. whipped topping
Mix sour cream, sugar, and coconut together. Fold in whipped topping and you’re done!
