A cooking class with local “Meals in a Jar” author

Three ways to make vegetarian pasta meals in a jar from Chef Tess Peterson.

Local chef Stephanie “Tess” Petersen will share recipes from her new cookbook Meals in A Jar: Gourmet Food Storage Made Easy at a book-signing and cooking class to be held from 4 to 6 p.m. Wednesday, Dec. 11 at the Chandler Honeyville Farms store.

Peterson is a classically trained chef who serves as corporate chef for Honeyville Farms. Her first book was The Gourmet Food Storage Handbook. She sells her award-winning baked goods — including decorative and painted breads — at farmers’ markets around Phoenix and also has launched a spice line.

Her meals-in-a-jar approach uses simple, freeze-dried ingredients to create beautiful gifts that — with a little hot water — turn into gourmet meals like Nacho Potatoes and Beef Skillet or Chunky Italian Spaghetti.

This cookbook, which hit shelves on Black Friday, features more than 100 recipes and detailed instructions for creating  shelf-stable, healthy, from-scratch, “just add water” meals for everyday use or longer-term storage.

During the first 30 minutes of the event, attendees will taste recipes and learn the cooking basics of assembling meals in a jar. Then they will build as many jars as they desire for the next hour. Ingredients will be available to purchase at a discount. Peterson will answer questions and assist in building the meals.
