Swedish pepparkaka cookies

On Saint Lucia day in Sweden, it’s a tradition to bake pepparkaka into the shape of a heart. If you break the cookie into 3 even pieces before you eat it, it’s considered to be good luck.

½ cups of softened butter
1½ cups of sugar
1 tablespoon of dark Karo syrup
2 teaspoons of baking soda
1 beaten egg
3 teaspoons of cinnamon
2 teaspoons of ground ginger
1 teaspoon of ground cloves
3¼ cups sifted flour
½ cups of orange juice, fresh or frozen

Cream butter and sugar together. Mix all the ingredients together thoroughly. Chill the dough for at least one hour to make it easier to work with. Roll out the dough and cut in desired shapes with cookie cutters. Bake on a buttered baking sheet at 350F for about 10 minutes.
