1 pie crust
6 ounces shredded Swiss cheese
1 box (10 ounces) frozen, chopped spinach
1 tablespoon minced onion
1 tablespoon lemon juice
1½ cups milk
5 eggs (can use 3 eggs and 2 egg whites)
Dash of nutmeg
Dash of pepper
Preheat oven to 375 degrees. Spread pie crust in a quiche or pie pan. Put cheese on pie crust. Cook spinach in a microwave per instructions on the package. Drain most of the liquid, then spread spinach over cheese.
Mix milk, minced onion, eggs, lemon juice, nutmeg and pepper in a bowl. Pour into pie shell. Bake at 375 degrees for 15 minutes, then reduce heat to 350 degrees and bake for another 40-45 minutes.
