Tucson-based, internationally renowned health guru Andrew Weil, M.D. gave a presentation recently at True Food Kitchen in Phoenix, the restaurant he developed in partnership with Fox Restaurant Concepts. He talked about the importance of a healthy breakfast — and provided this Agave Granola recipe for RAK readers.
Ingredients
3 cups rolled oats
1 cup pistachios
1 cup cashews
½ cup flax seeds
½ cup agave nectar
¼ maple syrrp
¼ cup expeller pressed canola oil
½ teaspoon salt
1 cup dried cranberries
Preparation
Preheat oven to 300 degrees. Mix oil, salt, agave and syrup in a large bowl. Add in the oats, pistachios, cashews and flax seeds; mix well with hands to ensure even distribution. Transfer granola mixture to cookie sheet. Bake for 25 minutes. Remove from oven, stir and bake an additional 15 minutes or until evenly toasted. Remove from oven and toss in the dried cranberries; mix well. Cool granola on sheet tray. Serve with milk of choice, yogurt and/or seasonal fruit — or enjoy by itself as a snack.
