Full credit for this one goes to the Trader Joe’s at Guadalupe and McClintock in Tempe. I visited the store recently with my cousin’s 20-year-old daughter Andrea, who is a junior at ASU. The staff was offering samples that day and the savory simplicity of this recipe was too tantalizing to ignore.
So, with thanks to Trader Joe’s, here’s an appetizer or lunch option you can whip up in seconds and still have guests and family members thinking it’s something truly special.
You will need:
Curry-flavored chickpeas (you can buy them pre-spiced in vacuum-sealed pouches at Trader Joe’s)
Bagged salad (baby greens work best)
Tzaziki or any other yogurt-based sauce or dip
Soft, whole-grain lavosh flatbread
Lay one piece of flatbread on a cutting board. Using a spoon or knife, generously slather on tzaziki or your choice of yogurt-based sauce or dip. Cover with a thin layer of salad greens, leaving about two inches at one end uncovered. Open chickpeas pouch. Use about half of the bag and sprinkle chickpeas across the salad greens, keeping distribution of chickpeas as even as possible.
Beginning opposite the end you left uncovered, role up the lavosh bread. Unexposed end (which has sauce but no salad greens or chickpeas on it) should work as “glue” to hold the wrap together.
Cut into four to six slices.
