1 cup cornmeal
1 cup all-purpose flour
1/3 cup white sugar
2 teaspoons baking powder
½ teaspoon salt
1 egg, beaten
¼ cup light olive oil
1 cup milk
mozzarella cheese
cheddar cheese
Preheat oven to 400 degrees. Grease two nine-inch pie plates (or one pie plate and one eight-inch square pan).
Mix together corn meal, flour, sugar, baking powder and salt. Add the egg, oil and milk. Stir until well combined.
Divide batter into the two pans. Bake for about 15 minutes, until lightly browned. Take out of the oven and place mozzarella cheese in the midddle and cheddar chaeese around the edge – to make the “candy corn” effect. Place back into the oven until the cheese is melted. Cool slightly before slicing into triangles.
