1 large sweet potato or yam per person
Olive oil (1 tablespoon per potato)
1-2 tablespoons Cajun seasoning, salt & pepper, chili powder or any other seasoning blend you prefer
Preheat oven to 400 degrees. Peel potatoes and slice into strips. Place cut potatoes on a rimmed baking sheet. Drizzle olive oil over the potatoes and toss to cover them completely. Season with Cajun seasoning (if you prefer it spicier, add more seasoning). Toss potatoes again to distribute the seasoning.
Cook uncovered for 30-40 minutes depending on how thick you sliced the potatoes. To ensure even cooking, stir every 15 minutes. Potatoes are done when they are no longer firm in the middle.
