This is a recipe I’ve modified over the years to pack it with complex carbohydrates and Omega-3 fatty acids. I call them “Game Day Pancakes” because I used to make them every Friday when my sons were playing high school football.
2 cups Trader Joe’s White Wheat flour
1 cup flaxmeal
½ cup oat bran (or “quick” oats)
¼ cup wheat germ
½ cup sugar
2 tablespoons baking powder
½ teaspoon salt
2 eggs
1/3 cup “extra light” olive oil
2¼ cups non-fat milk
Optional: blueberries and chopped, toasted pecans or walnuts.
Sift dry ingredients together. Combine eggs, milk and oil; add to dry ingredients. Stir until flour is moistened (adding extra milk if necessary). Add blueberries and nuts if desired. Pour batter onto preheated pancake griddle or frying pan. Flip after pancake batter bubbles.
