Blueberry Bran Muffins

1½ cups All Bran Original cereal
½ cup “quick” oats
½ cup flaxmeal
1ÂĽ cups skim milk (or milk substitute)
2 eggs
1/3 cup light olive oil (the “for baking” kind)
½ cup brown sugar
ÂĽ teaspoon salt
1 tablespoon baking powder
2 teaspoons cinnamon
1 cup wheat-white flour (can substitute up to ½ cup almond flour for extra protein)
Fresh or frozen blueberries
Chopped pecans or walnuts
Raw sugar

Mix cereal, oats, milk, flaxmeal, eggs, oil and brown sugar; let sit for a few minutes. Add remaining ingredients. Add up to a cup of frozen or fresh blueberries. Sprinkle chopped nuts and raw sugar crystals on top (if desired) before baking. Bake 20-25 minutes at 400 degrees.
