2 cups flour
½ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
½ cup of butter (softened)
1½ cups sugar
3 eggs
½ cup sour cream
½ cup milk
1½ teaspoons vanilla extract,
Cream Cheese Frosting (recipe follows)
Preheat oven to 350 degrees. Combine flour, cocoa powder, baking soda and salt in a bowl. Set aside. Beat butter and sugar with mixer until light and fluffy. Beat in the eggs, one at a time. Mix in sour cream, milk and vanilla.
Gradually beat in the flour/cocoa mixture, just until blended. Spoon batter into foil cupcake liners 2/3 full (makes about 24). Bake for 20 minutes or until toothpick inserted comes out clean. Cool completely before frosting.
Cream Cheese Frosting
1 8-oz package of cream cheese, softened
¼ cup butter, softened
1 teaspoon vanilla extract
4 cups powdered sugar
Beat cream cheese, butter and vanilla until light and fluffy. Gradually beat in the powedered sugar, 1 cup at a time, until smooth. Decorate with holiday sprinkles or color the frosting with food coloring.
